Cochini Appam for Passover - Recipe by Ann Samson
Ingredients:
- 1 packet broken matzah pieces
- a bowl of water to soak matzah pieces
- 6 eggs
- 1/2 cup brown sugar
- 1 cup silan (date molasses)
- 1/2 cup oil
- 1/4 teaspoon cardamom powder
- 1/2 cup grated coconut (optional)
- 1 1/2 cups raisins
- 1 cup small walnut pieces, chopped very fine or ground
- 1/2 cup water
Instructions:
- Preheat oven to 325 degrees.
- Grease a 9×13 dish.
- Beat eggs with brown sugar, silan, oil & cardamom powder in a large bowl.
- Mix in raisins, walnut pieces and grated coconut (if using).
- Soak matzah in water to soften, then drain and discard water. Do not oversoak.
- Add matzah to egg mixture and mix very well so that all pieces are covered.
- Add 1/2 cup water and mix again.
- When thick, pour into dish.
- Bake for approximately 40 minutes, till it pulls away from the sides.
- Let cool slightly.
- Cut into diamonds.
- Serve warm. Optionally add whipped cream.
