Almond Haystacks - Recipe by Ann Samson
Guilt Free Passover Cookies!
Ingredients:
- 2 egg whites
- 1/2 cup sugar
- 3 cups sliced almonds
- 1/2 cup almond extract
Instructions:
- Preheat oven to 350 degrees.
- In a large bowl beat egg whites until soft and white.
- Add sugar gradually and keep beating.
- Add almond extract.
- Add sliced almonds and mix well.
- Using a teaspoon make small mounds of mixture on a parchment lined or Silpat lined cookie sheet.
- Bake cookies in oven for 20 minutes or until golden brown.
- Turn oven off and leave cookies in with door open for an additional 10 minutes.
Makes approximately 30 cookies.
